jī (鸡) is pronounced as “jī,” while cōng (枞) is pronounced as “cōng.” Chicken congees (鸡枞) are a type of delicious delicacy known as the “king of mushrooms.” The meat of this mushroom is plump and robust, with a delicate and silky texture. Its taste is fresh, sweet, crisp, and tender, making it comparable to chicken meat, hence its name, “chicken congee.”
In nature, chicken congees form a symbiotic relationship with termites. This type of mushroom is mainly found in the southeast region of Guizhou province, and it also grows in areas such as Zunyi and Liupanshui in Guizhou.
